Our Pet-Nat got it’s name Snakebite during our first vintage back in 2019. After many failed attempts at disgorging (process of removing the yeast sediment after fermentation) we decided to just not disgorge. That decision was made by two of us covered from head to toe in red sediment. The wine needed a fitting name. We have refined Pet-nat over the last five years and have hit a style that we think is delicious and way too drinkable.
Pet-Nat is a raw, pure, living wine. That means you see, taste and hear the life’s work of our vineyards natural yeasts in your glass. It is an ancient style of bubbles made by bottling prior to dryness and allowing the ferment to finish in bottle. Artist Abbey Merson depicts what one might encounter with Snakebite. Something natural, unpredictable, delightful and intriguing. This is made without additives and some harmless sediment remains on the bottom.
